| It gives the desired length and shape to the dough which comes from the intercuring machine .As known,the Turkish Honderd tof bread is wider in the middle and smaller at each end.These are easily changed by adjusting the machine and the desired flatness can be optained.The first flat press makes the length adjustment and second sponge press can easily adjust the shapness of the edges.The user can replace the second pres with first one and get baget type french bread.
